Trevor says "These wines proudly bear our own St. JOHN label because they are, for us, the most perfect expressions of a region, a varietal, a style or a vintage, the result of longstanding relationships build slowly and meaningfully over many years, of close work with likeminded growers to achieve our vision long before the grapes are ripe on the vines, and of many hours of choosing and blending in the wineries to achieve cuvèes which truly reflect each terroir and year.


Our goal is always to create exceptional wines, but the journey is about more than this. It is the sharing of knowledge and experience, the intimate connection to the process. Just as our daily-changing menus are integral to our identity, so is our wine list. Provenance is key. These are not just ‘house wines’, they are the careful outcome of deep hands-on involvement and interest at every stage of the process, each bottle with its own story and its own reflection of our commitment to wine that is truly thoughtful, extremely well-made and, in short, just a real pleasure to drink."
