The Mediterranean trinity of the grape, the fig and the olive has been written into the history of The Minervois since the early Roman times. The old windmill towers and the millstone works above La Livinière are testimony to this. St. JOHN is but a blink or two in this history but on the day we opened our doors at Smithfield we served lucques, the celebrated crescent olive of the Minervois. So, “enfin” as one might say, we are now the importers of the wonderful extra virgin olive oils of Oulibo, from Bize-Minervois, and it’s about time!
From the limited annual cold pressings in November, this is a non-filtered pure oil, fresh and generous with hints of butter and grass, textured and a delight on the nose, wonderful both for dressings and for the sautéing of vegetables. An oil of terroir and provenance.
